exciting new dishes at Gee's created by new head chef Mark Bristow. Formerly at the Old Parsonage and the Sugar Club, London, Mark now heads the team. What kind of food does he serve? "We're multi-national in our style and there will be many influences on the kitchen - but common to everything we do is the brutal honesty of the food we serve. We won't ever drown our food with overly fancy sauces but make the most of the freshest ingredients. Lots of seafood, excellent fish and a whole range of shellfish will regularly appear on the menu."
